I don’t normally post recipes, I’m really not a whiz in the kitchen
This is as creative I’ve been all week, enjoying the last week of school holidays before the kids start on Monday – Izzy too with full time Pre-Primary!
However, today I made my own homemade museli. I have recently become a museli & yoghurt convert after many years eating Weetbix for brekky. When I finished the packet this week, I had a look at the ingredients and realised I could easily make my own – toasted too, so even better!
If you are interested in making your own here is my recipe – it makes a large batch:
4 cups Rolled Oats
1 cup sliced or slivered Almonds
1/2 cup Hazelnuts, chopped
1/2 cup Sunflower Kernels
1/4 cup Dried Apple, chopped
1/4 cup Dried Apricots, chopped
1/2 cup Shredded Coconut
1 cup Sultanas
1/3 cup Honey
Combine Oats, Almonds and Hazelnuts and spread onto a baking tray (I needed 2 trays). Drizzle over Honey and bake for approx 10min in a 200 degree oven - stirring once or twice.
When cool, combine the toasted ingredients with the remaining fruits, coconut and seeds:
And voila – yummy homemade toasted museli!

I see absolutely nothing wrong with eating muesli for every meal.

I make my own too (although it’s porridge all the way at the moment – brrr) and cranberries and dates are another good addition. Also, try getting hold of some other cereals to mix with the oats – I like rye or maize flakes – it gives a more interesting texture and flavour. Hm…I fancy muesli for lunch!
